While at the grocery this weekend I bought a huge bunch of carrots and, other than throw them heavy handed into a shepherd’s pie, I wasn’t quite decided on what to do with them.

Yum! Oatmeal chocolate chip is my favorite kind, Sunday afternoon is all settled up now.i believe i have discovered the perfect cookie.
for the past week, i have dreamed of oatmeal chocolate chip cookies but was too lazy to make them. yesterday afternoon, i conquered the task and the reward was so so good. almost too good…
i don’t particularly love raisins but i love the texture of oatmeal cookies. swapping chocolate chips for raisins combines the best of both worlds. i followed this recipe with very few variations — i used milk chocolate chips instead of semi-sweet and regular old fashioned oats instead of quick oats. (i prefer the chewiness of regular oats to the sogginess of quick oats.)
beware: this recipe makes a ton of cookies… and i’m not embarrassed to admit that i downed four of them straight out of the oven. they are that good. try throwing a handful of flax seeds into the batter — boom! healthy cookie ;)
